Recipe: "Beet Waste" Syrup

 

Forget shiny boxes of chocolates, flowers that wilt, and stuffed animals that end up in dusty corners. This Valentine’s, make something beetific.

RECIPE: “Beet Waste” Syrup

For adding a beet red zing, we reduced our beet juice into a sweet and tangy syrup! Here’s how:

All you need is 1 bottle of “Beet Waste” Juice.

We started with a bottle of our Good Use beet juice, poured it in a saucepan, and simmered it over medium-low until reduced to about ¼ cup. Here’s an easy way to know when your reduction is ready: dip a spoon into it and run your finger across. If it makes a clear path, your reduction is good to go! From here, you can make the perfect treat that will make your special someone’s heart sing.

Beet Pancakes with a side of nice cream

Here at Good Use, we like our pancakes with a side of ice cream. At least on Valentine’s day. So we poured a bit of the syrup into our batter for hot pink griddle cakes and the rest went right over a banana “nice” cream. Delish!

For an Indulgent Treat

For the ultimate (and very pretty) indulgence, we’re all about that chocolate cake. Chocolate Meringue Cake with Whipped Cream & Raspberries from Serious Eats to be specific. Swirl the beet syrup into the whipped cream for bright pink fluffiness, or drizzle it right over the top. The oyster is yours.
